There are only a few short days before we are faced with heading back to school. I know that many parents are jumping up and down at the thought of this, while others are dreading it. I am sort of in the middle. Being a school counselor, it means that I am also heading back to work (I am a 10 month employee). I’m always excited to start the new school year and always excited for the boys to get back into the swing of things. I will miss the lazy days and the time with my fellas though!
One thing that has become very clear to me the older the boys get is just how BIG their appetites are! Seriously, one day this summer I’m pretty sure they ate the entire snack pantry clean. I didn’t even know what to feed them! Graham especially has a large appetite the older he gets. After school seems to be one of the primary times this happens for him so I am primed and ready to go this year! Here is a quick and easy back to school treat that you could pack in lunch boxes or have ready after school one day.
Vanilla-Butter Popcorn Snack
Ingredients:
- 1/2 stick of butter, melted
- 1/4 cup brown sugar
- 2 Tbls International Delight Fat Free French Vanilla Creamer
- 1 bag of plain popcorn, popped
Preparation:
- Melt down your butter by placing it in the microwave on 10 second intervals. Make sure to stir in between.
- Whisk in the brown sugar and creamer well until it thickens.
- Pour the mixture over your popcorn in a large bowl and toss to combine.
- Serve and enjoy warm!
This is going to make you an afterschool hero! I’m sure of it. Even my husband who doesn’t love popcorn really enjoys this recipe. He says it tastes like a vanilla flavored rice krispie treat! Well, anything that makes them happy and takes me less than 5 minutes to make is welcomed. Here’s to yummy popcorn!
